1 ½ cup gluten free whole rolled oats
½ cup sweetened, shredded coconut
½ cup flax meal from ground flax seeds
¼ cup coconut oil
¼ cup honey
½ cup unsweetened, unsalted sunflower butter
¼ cup mini vegan chocolate chips, such as Enjoy Life brand
Makes 16 bars
In a microwave safe bowl, add coconut oil, honey and sunflower butter. Place in the microwave and melt for 30 seconds, stir, set aside and allow to cool.
- Flax is a marvelous food that has many health benefits. It comes in seed, oil and ground meal varieties and can be used in numerous ways from toppings, to baked goods, to smoothies.
